The association between emulsifiers and type 2 diabetes
In this prospective cohort study, a higher intake of some food additive emulsifiers (particularly carrageenan and guar gum) was associated with a higher risk of type 2 diabetes. Sources of the emulsifiers included dairy-based desserts, candy, cakes, and cookies.
